Fast-food chains may be striving to up their game this summer (bacon sundae, anyone?), but there’s one meaty trend you won’t find on a dollar menu anytime soon: artisan beef. That’s the subject of Lynne Curry’s new book, Pure Beef, a celebration of naturally raised, organic, grass-fed goodness. A James Beard Award journalism nominee and former vegetarian, Curry fell in love with the stuff when she left city life for the ranch-dotted grasslands of eastern Oregon over a decade ago. In Pure Beef, she chronicles her rural education and packs in 140 recipes tailored to the leaner, more heat-sensitive cuts of grass-fed beef.
